Fermented Cranberries with Rosemary and Apple Cider Vinegar
These fermented cranberries are the perfect combination of sweet, tart and spicy - a festive and healthy alternative to traditional sauces. Fermentation causes the cranberries to develop probiotic cultures that support digestion and strengthen the immune system - particularly helpful in the cold season. The rosemary gives them an aromatic note and the apple cider vinegar provides a pleasant acidity that rounds off the festive taste. Ideal as a side dish or to refine dishes to give Christmas dinner a special, healthy accent.
Ingredients
- 300 g fresh cranberries
- 1 small sprig of fresh rosemary
- 1 tablespoon apple cider vinegar (for additional acidity)
- 1 teaspoon sea salt
- 1 tablespoon maple syrup
- Filtered water
- Ripple Jar, Glass Weight, Fermentation Lid
preparation
- Prepare the cranberries: Wash the cranberries and fill them into the ripple jar. You can prick them slightly to help them ferment better, but don't crush them.
- Make the brine: Stir together water, sea salt and maple syrup in an Oleni Jar until the salt dissolves. Add apple cider vinegar to provide additional acidity.
- Add rosemary: Place the fresh rosemary sprig in the glass with the cranberries.
- Start fermentation: Pour the brine over the cranberries until they are completely covered. Place a glass weight on top of the cranberries to keep them under the brine.
- Close loosely: Place the fermentation lid on top.
- Fermentation process: Leave the jar in a cool, dark place for 3-5 days. Check daily that the cranberries are completely covered by the liquid.
- Maturation time: Once the desired level of fermentation is reached, place the jar in the refrigerator to slow down the fermentation process.
Roasted Maple Carrots
Roasted carrots in maple syrup, refined with fermented cranberries from the previous recipe, combine the best of sweetness and acidity in one dish. This combination of warm, caramelized carrots and the tangy, sour cranberries not only offers taste, but also healthy benefits: While the carrots are rich in antioxidants and fiber, the fermented cranberries promote gut health and strengthen the immune system. Ingredients
In combination with fermented cranberries from the previous recipe.
- 500 g carrots
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- salt and pepper
- A handful of fresh parsley
- A handful of sliced almonds
- Handful of fermented cranberries from previous recipe
preparation
- Preheat the oven to 220 °C.
- Peel the carrots and halve them lengthwise (or quarter them if they are very thick).
- In a bowl, mix together the maple syrup, olive oil, cumin, coriander, salt and pepper. Add the carrots and mix well.
- Place the carrots on a baking sheet and roast for about 25-30 minutes, until soft and caramelized.
- Remove the roasted carrots from the oven, sprinkle the fermented cranberries on top and garnish with fresh parsley and sliced almonds.
