Peel the sweet potatoes, cut into cubes and spread with olive oil and salt on a baking tray lined with baking paper. Bake for 20-25 minutes at 200° C. Cook millet according to the instructions on the packet and then let it cool slightly. While the sweet potatoes are in the oven and the millet is simmering, wash and clean the peppers and cut them into bite-sized pieces. Wash the cucumber and cut into slices.
