Have you ever had the pleasure of eating sweet potatoes? We love them from the oven, as chips, mashed potatoes, patties or as a delicious creamy soup in our FAVORITE JAR . Pre-cooked, you can store the vegetables in the fridge for 2-3 days and, if necessary, puree the soup in a blender in less than 5 minutes. It is best to cut old bread into cubes before it gets really hard. Then you can dry the cubes really well and store them in a dry place in the Ball Mason Jar | Wide | 950 ml for several weeks. In a coated pan, briefly fried in olive oil, you have crunchy croutons ready to hand at all times and they taste so much better than store-bought soup garnishes. What you need:- 2 x Lunch Box Mason Jar | 475ml
- 2 x Lunch Box Mason Jar | 700ml
- 500 g sweet potatoes, potatoes, carrots
- 1 onion
- 2 cloves of garlic
- 400 ml coconut milk
- 400 ml of water
- 1 teaspoon turmeric
- 1 tablespoon vegetable stock powder
- salt, pepper to taste
- nuts and sprouts as topping
- 2 slices of stale bread + 1 tablespoon olive oil
Cut the stale bread into cubes and fry in a non-stick pan with olive oil until golden brown and then place in the stainless steel lunchbox insert .
Peel and roughly chop the sweet potatoes, potatoes, carrots, onion and garlic cloves. Cook in a steamer or pot until done. Puree finely in a blender together with all the other ingredients. Pour the soup into your FAVORITE JAR , top with nuts and sprouts and seal with the croutons in the lunchbox .
