The citrus fruits and rosemary give the oxymel a fresh, invigorating note, while ginger and cinnamon add a warm, spicy depth. Ideal as an immune booster and perfect for anyone who wants to give their loved ones a healthy and unique gift in a jar.
Ingredients:
- 200 g honey
- 200 ml apple cider vinegar
- 1 organic orange
- 1 organic lemon
- 1-2 fresh sprigs of rosemary
- 1 piece of ginger
- 1 cinnamon stick (optional)
Directions:
- Prepare herbs and fruits : Cut the orange and lemon into thin slices and also cut the ginger into slices
- Layering in a glass : Alternate the citrus fruits, ginger slices and rosemary sprigs in a clean glass. Add the cinnamon stick if you like a warm spicy note
- Mix honey and vinegar : Mix the honey and apple cider vinegar in a separate bowl until combined. Then pour the mixture over the fruits and herbs in the jar so that everything is well covered
- Allow to ferment : Close the jar and allow the oxymel to steep in a cool, dark place for about 1-2 weeks. Shake gently from time to time. After the steeping time, strain the solid components and pour the oxymel into a clean jar.
Fermented Mango Chili Chutney
The fermented mango-chili chutney combines the sweetness of ripe mangos with a subtle spiciness of chili and the spice of cumin and coriander seeds. Fermentation creates natural probiotic cultures that support intestinal health and promote digestion - perfect for the Christmas season. The chutney is a very special taste experience and is ideal as a gift in a jar or as a spicy accompaniment to your Christmas menu.
Ingredients:
- 2 ripe mangos, peeled and cut into small cubes
- 1 red onion, finely diced
- 1-2 fresh red chilies, finely chopped (depending on desired spiciness)
- 2 garlic cloves, finely chopped
- 1 tablespoon fresh ginger, finely grated
- 50 g dried cranberries
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon mustard seeds
- 1 tablespoon lime juice
- 15 g salt (approx. 2% of the total weight of the ingredients)
- 500 ml of water
Directions:
- Prepare mangos and onions : Place the diced mangos and onions in our food storage containers
- Add spices and chili : Add chilies, garlic, ginger, raisins or cranberries, cumin, coriander seeds and mustard seeds. Mix everything well
- Make the brine : Dissolve the salt in the water to make a brine. Add the lime juice
- Fermentation : Fill the mixture neatly into Ripple Jars 0.6L using our funnel and press down gently to avoid air bubbles. Pour the brine over it until the chutney is completely covered. Use a weight to keep the ingredients under the liquid
- Put the lid on : Close the jars loosely with our fermentation lid
- Fermentation : Allow the chutney to ferment for 3-5 days at room temperature. Check daily for bubbles and a slightly sour and spicy taste. If necessary, slightly open the lids to release the pressure
- Storage : After fermentation, place the chutney in the refrigerator where it will keep for several months
