Preparation:

Activation of the sourdough starter:

  • Mix the wheat sourdough starter with 100 g wheat flour and 100 ml lukewarm water in the Mason Jar in your starter set
  • Close the jar with the lid and fasten the rubber band around it
  • Let it ferment at room temperature (ideally around 25°C) for about 48 hours. Use the thermometer sticker to monitor the temperature
  • After 48 hours, the sourdough should be active, and when the starter bubbles vigorously, it is ideal for further processing

Pumpkin puree:

  • Halve the Hokkaido, remove the seeds and cut into wedges. Bake in a preheated oven at 200 °C top and bottom heat for about 15-20 minutes and then puree the mixture

Dough:

  • For the sourdough, mix 40g of active sourdough starter and water in your favorite glass . Add flour and sugar, stir again, cover lightly and leave to mature for about 4 hours at 26-28 degrees, so that the volume doubles
  • Now we prepare the main dough. To do this, we put all the ingredients except the margarine in a mixing bowl and mix the dough for 5 minutes on the lowest setting and then 10 minutes on the second setting. Then we gradually add the margarine in small pieces and knead the dough for another 10-12 minutes on the second setting. Then cover and let it rise in a large bowl for 90 minutes.
  • In the meantime, mix the pumpkin spice butter. Mix the pumpkin puree, soft butter, sugar, pumpkin spice and cinnamon until creamy
  • Roll out the dough into a large rectangle, about 2-3 mm thick. Spread the pumpkin butter evenly over the dough and roll the dough lengthways. Divide into 12 equal-sized snails with a string and place in an oven dish. Leave to rest for 30 minutes
  • Bake the snails in the oven at 160 °C for 30 minutes, increase to 180 °C and bake for another 10 minutes until golden brown
  • Mix together cream cheese, oat milk, powdered sugar and pumpkin spice. Spread on the still lukewarm snails
