Recipe: Sourdough Whole Grain Bread with Nuts

Thanks to our sourdough starter set, the bread is not only nutritious but also incredibly easy to prepare. With a handful of high-quality ingredients and a little patience, you can bake a fresh, crispy bread that goes perfectly with any meal. Here you will find the ingredients and step-by-step instructions for your new favorite bread:

Ingredients :

  • 500 g wholemeal flour (rye)
  • 150 g active sourdough starter easily with our Starter Set
  • 350 ml of lukewarm water
  • 10 g salt
  • 50 g mixed nuts (e.g. walnuts, hazelnuts)
  • 30 g seeds (e.g. sunflower seeds, pumpkin seeds)
  • 1 tablespoon honey (optional)

Activation of the sourdough starter:

Preparation :

  • Mix the wheat sourdough starter with 100 g wheat flour and 100 ml lukewarm water in the Mason Jar from your set
  • Close the jar with the lid and fasten the rubber band around it
  • Let it ferment at room temperature (ideally around 25°C) for about 48 hours. Use the thermometer sticker to monitor the temperature
  • After 48 hours, the sourdough should be active, and when the starter bubbles vigorously, it is ideal for further processing

Prepare the dough:

  • In a large bowl, mix the sourdough starter with the lukewarm water until the starter has dissolved
  • Add the wholemeal flour and optionally the honey and mix well until a sticky dough is formed
  • Let the dough rest for 30 minutes so that the flour can absorb the water
  • Add salt and nuts:
    • Add the salt to the dough and work it in well
    • Add the chopped nuts and seeds and work into the dough
    • Knead the dough for about 10 minutes until it is elastic and smooth
  • Let the dough rest:
    • Cover the dough and let it rise in a warm place for 3-4 hours until it has increased in size significantly
    • During this time, stretch and fold the dough every 30-60 minutes to strengthen the structure
  • Form the dough:
    • After rising, place the dough on a lightly floured work surface and form into a ball
    • Place the formed dough in a well-floured proving basket or bowl and cover again
    • Let the dough rise for another 2 hours until it has risen
  • Bake:
    • Preheat the oven to 240°C and heat a cast iron roasting pan or a heavy pot in the oven
    • Carefully pour the dough into the hot pot, put the lid on and bake for 20 minutes
    • Remove the lid and bake the bread for another 20-25 minutes until the crust is deep golden brown and the bread sounds hollow when tapped on the bottom
  • Cool down and enjoy:
    • Remove the bread from the oven and allow to cool completely on a rack before slicing
