Fermented Zoodles
Fermented foods are trending , and for good reason. Not only are they incredibly healthy, but they're also delicious. In this blog post, you'll learn how to make your own fermented zucchini noodles, also known as fermented zoodles. These tasty fermented zoodles are not only a treat for the taste buds, but they're also great for your gut health.

Make zoodles easily yourself with a spiral cutter
Before we get into the recipe, let's take a moment to talk about why a spiralizer is the perfect tool for making fermented zoodles. A spiralizer allows you to slice the zucchini directly into the fermentation jars, making the process much easier. You can store and ferment the zucchini noodles directly in the jar without any extra steps for preparation. This means less effort and more time to enjoy your fermented deliciousness.
Recipe: Fermented Zoodles
What you need:
- 2 large zucchinis
- 1 cup filtered water
- 1 teaspoon sea salt + more for sprinkling
- 1 chili (mild)
- Oleni Glas
- spiral cutter
- glass weight and fermentation lid
Directions:

Wash and clean the zucchinis thoroughly.

Use a spiral cutter to cut the zucchini into noodle shapes.

Season the zucchini noodles generously with sea salt and a little pepper. Massage the salt into the zoodles. This will help extract excess water.

Now start layering the zucchini noodles into the jar, pressing firmly to avoid any air gaps. You want to make sure the zoodles are packed tightly in the jar.

Add some of the mild chili by placing it between the layers of zucchini noodles. You can adjust the spiciness to your taste.

Continue layering the zucchini noodles and chili until the jar is filled to about 1.5 inches from the rim, making sure to leave enough room for the liquid.
- Use the masher to create more space and drain the zucchini.

Prepare the brine by dissolving 1 teaspoon of sea salt in 1 cup of filtered water. Carefully pour the brine into the jar so that it is evenly distributed among the zucchini noodles.

Use a proofing weight to weigh down the zucchini noodles and ensure they are completely covered with the brine.

Close the jar tightly.

Allow the fermented zoodles to ferment at room temperature for about 5 days.
