What you need:
- 450 g orzo pasta
- 180 g dried apricots
- 180 g red onion
- 100 g cherry tomatoes
- 60 g baby spinach
- 3 tablespoons lemon juice
- 200 g almonds
- 120 g feta
- 50 g mint leaves
- 50 g parsley leaves
- Black pepper to taste
- 70 g chickpeas
Dressing:
- juice of 2 large lemons
- ½ tablespoon salt
- ½ teaspoon black pepper
- ¼ teaspoon dried red chili flakes
- 160 ml olive oil
- 3 tablespoons honey

Cook the orzo pasta al dente according to the instructions on the package. Then rinse with cold water and drain.
