The recipe is enough for about 8 glasses of Ball Mason Jar | Regular | 475 ml . If you are worried that the sugar will burn when caramelizing, you can also mix it with 300 ml of water, then heat it and let the mixture slowly caramelize until golden yellow. What you need:- 8 x Ball Mason Jars | Regular | 475ml
- 8 x chalkboard paint lids
- 1 x stainless steel honey spoon
- 2.5 kg pears
- 1 organic lemon
- 500 g sugar
- 200 ml white balsamic vinegar
- 500 ml pear juice or freshly squeezed pear juice
- 1 teaspoon ground pepper
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 0.5 tsp ground cloves
- 3 pieces of star anise
- 1 tablespoon juniper berries
- salt to taste
Sterilize your FAVORITE JAR , ladle and funnel for filling and place on a clean tea towel. Put the star anise and juniper berries in a tea filter and screw on the lid.
Wash, peel, core and dice the pears. Squeeze the lemon and pour it over the pear cubes to prevent them from turning brown.
Melt the sugar in a saucepan without stirring and caramelize until lightly golden. Alternatively, melt with 300 ml of water and caramelize until golden. Remove the caramel from the heat and deglaze with vinegar and pear juice and mix everything well. Add the diced pear, pepper, cinnamon, cloves, ginger and the tea filter with star anise and juniper berries. Simmer for around 20 minutes at a medium heat. Then remove the tea filter.
Puree the mixture until only small pieces remain. Season with salt and continue cooking for 5 minutes.
Using the funnel and a ladle, pour the finished chutney into your FAVORITE JAR and close it immediately. The winter chutney will now keep for up to 1 year in the Ball Mason Jar | Regular | 475 ml .
