When is water kefir ready? Depending on the room temperature, your water kefir can be ready after just 1 day. In the summer months, fermentation is very quick. It is therefore best to try your water kefir every day with a clean spoon. You can drink it after 3 days at the latest. What do I do with the crystals? You can buy water kefir crystals in the pharmacy, health food store or online. Rinse the crystals before and after fermentation and store them tightly closed in the refrigerator. The crystals multiply during fermentation. For each new fermentation, only use as many crystals as are specified in the recipe. How long does water kefir last? You can store your finished lemonade in the refrigerator for up to 2 weeks, tightly sealed. After that, it may be too sour to drink. Which dried fruits can I use for fermentation? We prefer to use dates. But you can also use dried figs, apricots or raisins. It's best to experiment and see what you like best. Close with the Mason Tops fermentation attachments and the screw ring. Leave at room temperature for 2-3 days, avoiding direct sunlight. As soon as your lemonade has finished fermenting, rinse the water kefir crystals and store tightly sealed in your FAVORITE JAR until the next fermentation.
