Grilled Paprika Sauce
What you need (for 4 servings):- 4 x Ball Mason Jars | Spiral | 475 ml or
- 2 x Ball Mason Jar | Spiral | 950ml
- 3 large red peppers
- 4 heaped tablespoons almond or cashew butter
- 3 cloves of garlic
- 3 tablespoons olive oil
- 3 tablespoons of yeast flakes
- Salt
- pepper
- oil for frying
- 1-2 zucchini for the spaghetti
- roasted pine nuts as a topping
Line a baking tray with baking paper and place the peppers on top. Grill on the highest setting on the top rack for 5-10 minutes until they develop dark blisters. Remove the peppers, turn them over and grill for another 5-10 minutes. Allow the peppers to cool slightly. In the meantime, roughly chop the garlic and fry in oil until it turns brown. Peel the skin off the peppers and remove the stalk and seeds. Puree the peeled peppers together with the nut butter, garlic, olive oil and yeast flakes in a blender or with a hand blender. Season with salt and pepper. Use the spiral cutter to cut the zucchini into spaghetti. Spread the grilled pepper sauce on the Ball Mason Jar | Spiral | 475 ml or Ball Mason Jar | Spiral | 950 ml .
