What you need: And here's how it works: It's best to chop the carrots with a spiral cutter or grate them. Put them in the Mason jar and mash! Important: soak the jar in hot water beforehand to make it sterile. Add a pinch of salt and keep mashing until some juice comes out. This is not a must, it makes the broth in which the carrots are lying even more intense. Now it's time to prepare it. Use a new jar - e.g. the Ball Mason Jar | Wide | 700 ml and fill it with warm water. Now we mix all the ingredients in it, such as ginger, chilli, star anise and vinegar. The water has to be warm so that the sugar and salt dissolve. Now pour the whole thing into the large FAVORITE JAR . Stir a little if the carrots are so close together that no liquid comes through. Once everything is covered, put the fermenting glass weights in the jar. 1 or 2 depends on how much space there is at the top - the carrots should be pressed down well so that only the liquid remains at the top. Now all you need are the fermentation attachments for the glass . You always get the fermentation attachments in packs of 4, so you can ferment several glasses at the same time. The attachments are the little secret to successful fermentation - they allow gases to escape and prevent oxygen from getting into the glass. The perfect conditions for fermented products. Chili, carrots and star anise are a great combination for fermentation - pure taste! Let it rest in the kitchen for a whole day. After 1-2 days you will see the first bubbles rising - then the whole thing is fermenting. Yay! After 2-3 days you will see a kind of foam deposit - this is good and completely normal! After 3-4 days the whole thing starts to smell sour - not like vinegar, but just a little sour. On the 4th day, just try the fermented carrots in the jar - if it is crunchy and sour enough for you, replace the fermentation attachments with our included airtight lids . The longer you let the whole thing ferment, the softer and more sour the carrots will become. If you are happy with the result, put the jar with the airtight lid in the fridge - this will slow down the fermentation process considerably due to the temperature.
