If you like cauliflower, you'll love fermented cauliflower. Spiced up with a little curry and chili, the vegetable tastes great in a salad or a sandwich. By adding spices such as curry, chili, mustard seeds, caraway or fresh herbs, you can create great flavor combinations during fermentation. Just be a little creative and experiment - that way you'll have a little surprise in your jar every time. What you need: And here's how it works: First, wash the cauliflower well. Cut it into small florets. Put it in the Mason Jar. Try to pack as much as possible into the jar so that there are as few empty spaces as possible. You can fill the empty spaces with garlic cloves. At the end, pour with the salt, the curry into the glass and fill it with water. When filling it, it is important that you leave some space at the top so that your glass weight for fermentation still fits in exactly. After about 5-7 days you can taste the cauliflower for the first time - do you want the taste to be more intense? Then let the cauliflower ferment for up to 2 weeks. As soon as you are happy with your result - add it to the salad and seal the rest with the airtight lid and store the cauliflower. Enjoy and try out different spices!
