The recipe: Fennel-Orange Salad

Now for the heart of this post – the recipe for a delicious fennel, orange and quinoa salad.

What you need:

  • 4 oranges
  • 150g quinoa
  • 100ml rapeseed oil
  • 50g walnuts
  • 2 bulbs of fennel

And this is how it works:

  1. Preparation : Take the fresh fennel and the juicy oranges out of the fridge. These two ingredients will give your salad a fresh and fruity touch.
  2. Bake the quinoa until crispy : Mix half of the quinoa with a splash of rapeseed oil, freshly squeezed lemon juice and a pinch of salt. Spread the mixture evenly on a baking tray lined with baking paper.
    Bake the quinoa in a preheated oven at 175 degrees for about 30 minutes until crispy. While the quinoa is baking, you can enjoy the delicious aroma spreading through your kitchen.
  3. Mix the salad : Cut the fennel and oranges into fine pieces and place them in a large bowl.
    Add the crispy quinoa, crunchy walnuts and fresh sprouts. This mix of different textures and flavors will delight you.
  4. Add dressing : Drizzle the salad with about two-thirds of the creamy tahini dressing.
    Mix everything carefully so that the flavors combine well and the salad is nicely seasoned.
  5. Optional : If you like, add a dash of aromatic basil oil to give the salad an additional, delicate flavor.
