Batch Cooking Day 3: Cauliflower Hummus with Chili Herb Oil
Today is the third day of our vegan batch cooking adventure! Today we have a real taste sensation on the menu: cauliflower hummus with chili herb oil. This bowl combines the mild taste of cauliflower, the creaminess of hummus and the fiery note of chili herb oil to create a delicious meal. Already prepared ingredients
Before we start preparing, let's look at which ingredients you have already prepared on Prep Day . If you want to cook this recipe outside of the Batch Cooking week, you can find more information in this blog post all information about preparation:
1. You have already divided the cauliflower into small florets, seasoned it and roasted it in the oven for about 20 minutes.
2. You have already made the chilli oil from the following ingredients: herbs, garlic, paprika, chilli flakes, sesame seeds, lemon peel, maple syrup and olive oil.
Everything ready? Then nothing stands in the way of your bowl!
The recipe: Cauliflower hummus bowl with chili herb oil
Ingredients :
- 1 cauliflower, cut into florets (approx. 800 g)
- 2 tablespoons extra virgin olive oil
- 2 teaspoons smoked paprika powder
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- salt and black pepper
- To serve either pita or chips
Chili herb oil:
- 80 ml extra virgin olive oil
- 30 grams of fresh herbs, chopped (coriander, dill, parsley)
- 1 garlic clove, grated
- 1/2–1 teaspoon paprika
- 1/2–1 teaspoon chili flakes
- 2 tablespoons sesame seeds
- 2 teaspoons lemon peel
- 1 teaspoon maple syrup
Preparation:
Spread the hummus in a shallow bowl. Arrange the cauliflower on top and spoon the chili herb oil over it. Serve with pita or chips.
