The recipe: Creamy Zucchini Pasta

Now we are ready to prepare the Creamy Zucchini Pasta. Here is what you will need:

What you need:

  • 3 zucchini
  • 150 g roasted walnuts
  • 50 g fresh basil
  • 3 roasted garlic cloves
  • juice of one lemon
  • 3 tablespoons olive oil
  • 150 ml of water
  • 500 g pasta of your choice
  • A handful of spinach (about 40 g)
  • sea ​​salt and black pepper to taste
  • pine nuts or almonds (optional, as a topping)

And this is how it works:

  1. Cook the pasta al dente according to the instructions on the package. Then drain and set aside.

  2. While the pasta is cooking, prepare the creamy zucchini sauce. Cut the pre-roasted zucchini into pieces and place them in a blender.

  3. Add the roasted garlic cloves, fresh lemon juice, olive oil, water and toasted walnuts.

  4. Mix everything into a velvety sauce.

  5. In a large skillet, heat the zucchini sauce mixture and add the spinach. Stir until the spinach wilts.

  6. Add the cooked pasta to the pan and mix thoroughly. Add sea salt and black pepper to taste.

  7. Serve the creamy zucchini pasta on plates, garnish with fresh basil and toasted walnuts. For an extra crunch, you can also sprinkle pine nuts on top.
