Batch Cooking Day 2: Vegan Rainbow Bowl
Today, the second day of our batch cooking series, we're bringing you a Vegan Rainbow Bowl, and I'm so excited to have you join us again. Now let's get started - let's start preparing the Rainbow Bowl together and conjure up these delicious flavors on your plate!
Already prepared ingredients
Before we start preparing, let's look at which ingredients you already have on hand. Prep-Day If you want to cook this recipe outside of the Batch Cooking week, you can find it in this blog post all information about preparation:
- cooked rice
- chickpeas
- roasted sweet potato
- Pickled Onions
- chopped nuts
- roasted broccoli
- Dressing (tahini, lemon juice, apple cider vinegar, miso paste, garlic powder, water to dilute)
The recipe: Vegan Rainbow Bowl
Dressing:
- 1 tablespoon tahini
- juice of 1/2 lemon
- 1 teaspoon apple cider vinegar
- 1 teaspoon miso paste
- 1/2 teaspoon garlic powder
- 1-2 tablespoons of water to dilute
Other ingredients:
- 1 jar of chickpeas, rinsed and drained
- 1 sweet potato, diced and roasted
- Pickled Onions
- Mixed nuts (e.g. almonds, walnuts), roughly chopped
- broccoli (roasted)
- Brown Rice (cooked and cooled)
- pomegranate seeds of half a fruit
Directions:
- Arrange all prepared ingredients in a bowl.
- Drizzle with the prepared dressing.
- Enjoy!
